Australia’s oldest and largest city, the oceanside metropolis of Sydney, is the perfect place to begin. You’ll spend your first afternoon in stunning Sydney Harbor aboard a beautifully appointed 65’ custom-built motor yacht. While cruising among secluded beaches and coves, many of which are only accessible by boat, you’ll enjoy a sumptuous chef-prepared lunch accompanied by premium Australian wines.
Over the next two days you will see the very best of Sydney starting with the most famous building of the late 20th-century, the Sydney Opera House. After you’ve experienced this cultural and architectural masterpiece and discovered the stories behind Danish architect Jørn Utzon’s remarkable achievement, you’ll step into Bennelong, the restaurant occupying the first sail of the Opera House. After seeing the historic Rocks area, the city’s CBD (Central Business District), and more of Sydney’s best, you’ll head for the coast to explore–from Coogee Beach to Bondi Beach to Rose Bay–for a private seaplane ride that follows the coastline along Sydney’s Northern Beaches before turning inland to fly over the majestic Ku-ring-gai Chase National Park. The plane will set down on the tranquil waters of Cowan Creek where you’ll disembark at the private wharf of the Cottage Point Inn, one of Sydney’s best-kept secrets. Here you’ll meet the head chef who will design a menu based on your preferences, which you’ll enjoy amid the sights and sounds of the Australian bushland and birdlife.
You’ll also join a local astronomer and an Aboriginal host for night of stargazing in the Royal Botanic Gardens, open just for you. Stories of space volcanoes, dark energy and Aboriginal dreamtime will fill this night to remember.
The culinary pinnacle of your Sydney experience will be dinner at Quay—one of Australia’s most celebrated restaurants. Continually inspired by nature, the creative process for award-winning Sydney chef Peter Gilmore begins in working closely with the farmers, fishermen, producers and artisans who cultivate bespoke produce exclusively for Quay. On this evening, you’ll sample the chef’s signature degustation menu accompanied by a selection of benchmark wines.
Just off the South Australian coast, Kangaroo Island is a microcosm of diverse landscapes and home to an abundance of native wildlife. Its untamed coastline is home to colonies of sea lions and New Zealand fur seals and its bushland shelters wallabies, kangaroos, koalas and a plethora of birdlife. You will investigate this amazing environment by foot and by four-wheel drive.
Southern Ocean Lodge, your home for three nights, adjoins two National Parks and overlooks a dramatic section of Kangaroo Island coastline. Rugged cliffs, wild-ocean, white beaches and virtually untouched native vegetation are complemented by an ecological design and organic luxe interiors, as well as the Southern Spa where you will enjoy a signature treatment.
Your private guide will take you to the beach of Seal Bay for a fascinating walk among the sea lions—a colony of 600 bulls, cows and pups. You’ll climb the spectacular dunes of Little Sahara to enjoy stunning views and traverse the middle of the island via the Parndana Wildlife Park, an animal refuge, where you’ll discover colorful Australian birds, pet a koala and feed a kangaroo! On the pristine north coast beaches of Snellings and Stokes Bay, you may go for a swim amid breaking waves in some of the most transparent water you’ll ever experience. During your privately guided four-wheel drive tour of Kangaroo Island, you’ll visit the Flinders Chase National Park, home to all varieties of native animals and birds, where kangaroos laze and Cape Barren geese graze. Admirals Arch, an ancient limestone formation next to the ocean, is where an active colony of New Zealand fur seal hang out. The ocean views are fantastic as you progress towards the Remarkable Rocks via the spectacular coastline of Cape du Couedic, where the forces of nature have carved modern sculptures out of the granite. You may spot an echidna (spiny anteater) or Crimson Rosella parrots.
The Hanson Bay Wildlife Sanctuary features 9,500 acres of protected land with an abundance of koalas easily seen in the Tasmanian Blue Gum trees. In Grassdale, part of the Kelly Hill Conservation Park, you’ll watch the large ‘mob’ of kangaroos that graze the grassy flats. Next stop, the turquoise waters of Vivonne Bay, where you may sight a penguin in its rookery.
After your Kangaroo Island adventure, you’ll head to the Barossa Valley for your next stop. Just over an hour’s drive from Adelaide, the Barossa Valley is perhaps the best-known wine-producing region in Australia boasting superb Shiraz and first-rate Rieslings. This gourmet lover’s playground is enriched by a strong European heritage reflected in its wines, food, architecture, festivals and people.
En route to the Barossa Valley, there are many places to see, based on your interests. You’ll be introduced to the charming city of Adelaide with a reputation as the arts capital of Australia. You may choose to experience Tandanya, Australia’s National Aboriginal Cultural Institute or visit the National Wine Centre. The Adelaide Hills offer a delightful collection of village galleries.
You’ll enjoy a visit to The Cedars, the studio-home of the late Sir Hans Heysen, one of Australia’s greatest artists, and to Hahndorf, Australia’s oldest German settlement, where the main street is lined with galleries and shops.
Once you’ve arrived in the Barossa Valley, you’ll love your winery visit and dinner with David Powell of Powell and Son. Powell and Son red wines are made from the classic Rhône varietals: Shiraz, Grenache and Mataro and its whites: Roussanne, Marsanne as well as Eden Valley Riesling.
For your final stop—it’s time to chill out in the tranquil lagoons of the warm, tropical South Pacific. The exotic islands of Fiji are comprised of approximately 300 islands dotted across 200,000 square miles of ocean. Your stay at the Fiji Orchid will be a short but sweet interlude before continuing on to your private island paradise.
